Grilled Chicken with Strawberry Avocado Salsa

Grilled Chicken with Strawberry Avocado Salsa 
This recipe yields four servings 

  • 4 grilled chicken breasts
  • 1 1/2 cups diced strawberries
  • 2 small avocados, diced
  • 1/2 red onion, diced
  • 1 jalapeno, minced
  • juice of 1/2 lime or lemon
  • Optional salt and pepper to taste

This recipe takes a bit of prep work in dicing all the salsa ingredients; however once that is complete, it just requires you tossing everything in a bowl to combine the ingredients. Season with salt and pepper if you’d like and serve over the chicken.

This salsa is very flavorful! It can be paired with chicken (as I will be having today) but would be a lovely compliment to fish or shrimp as well.

Blueberry Banana Quinoa Muffins

I came home to some very ripe bananas yesterday, but was low on ingredients to make my Banana Oat Muffins so with a little ingenuity, I mixed up this tasty treat to enjoy this week.

Ingredients :

3 ripe bananas
1 cup almond milk (I used the unsweetened kind)
2 eggs
1 tsp of vanilla extract
1 tbsp of baking powder
1 1/2 cups of old fashion Oats
1/2 cup of cooked quinoa
1 cup of blueberries

  • Add the bananas, milk, eggs, and vanilla extract to your blender (I use my magic bullet blender) you can mash the banana with a fork, and then add in the rest of the wet ingredients, but I find the blending is easier and makes sure the bananas are thoroughly mixed in each muffin
  • Transfer your liquid ingredients from the blender to a mixing bowl
  • Add in the baking powder, oats, cooked quinoa, and blueberries
  • Mix well
  • Transfer 1/4 cup portions to muffin/cupcake liners
  • Bake at 350 for 20 minutes

The quinoa gives this muffin a nutty flavor and increases the protein content. This recipe will yield different number of muffins depending on the size of your bananas. Usually some where between 12 and 15 on average.

Thai Chicken in the Slow Cooker

This recipe should yield 6 servings

Ingredients

  • 2 1/2 lbs of chicken (I used breasts)
  • 1 c of salsa (the recipe called for hot, I think you can choose based on your palate. If you can, look for one with no sugar added. Natures Promise from Stop & Shop has a very tasty one)
  • 1/4 c of peanut butter
  • 2 Tbs of lime juice
  • 1 Tbs of soy sauce
  • 1 tsp of minced ginger
  • 1/2 C of peanuts, chopped
  • 2 Tbs of cilantro

Directions

  1. Place Chicken in the slow cooker.
  2. In a bowl, mix together the salsa, peanut butter, lime juice, soy sauce and ginger.
  3. Our mixture over chicken
  4. Cover, cook on LOW 8-9 hours or HIGH 3-4 hours
  5. *Since I used breasts, I chose to shred mine with a fork – that is not a required step, just something I like doing

Seriously, it is THAT EASY!
